Dong Ding Oolong tea is given its odd name because the tea bushes are grown in a very fertile area on the slopes of Dong Ding Shan (Frozen Summit Mountain). Among the lesser fermented oolongs, Dong Ding leaves have been delicately hand-rolled to give a complex infusion - it is smoother than black tea, less grassy than green tea, and displays a certain balance and harmony in the cup that is almost orchid-like. Like all Oolong's Dong Ding should be drunk without milk or sweeteners.
